EDIBLE ALCHEMY will be presenting a talk on the microbiome and be bringing the Microbial Circus Freak Show of bacterias to talk, show, tell and touch them together and get more familiar with the microbial world that is constantly around us.
from 11:15 – 11:45 Bacteria Barista, Alexis Goertz,will do a talk about the following:
Fermentation is quickly becoming a lost art, but it is being reclaimed as an energy-efficient, food preservation technique, rooted in our cultural past that provides a unique approach to whole-food nutrition.
– A discussion about bacteria, yeast and pro-biotics
– How the fermentation process works
– What is the difference between anti-biotic and pro-biotic
– How can we use wild fermentation in our daily lives
Then from 12:30 – 13:30 – Alexis will have a fermentation demonstration.
Alexis will be bringing her Microbial Freak Show of SCOBYs (Symbiotic Colonies Of Bacteria and Yeast). Participants are able to see, touch and smell these living bacterial successions and learn what they are all about. Alexis will also give a hands-on demo on how to make probiotic vegetables simply through the technique of wild fermentation. She will go through methods and techniques in an interactive way and by demonstrating them to an audience. Participants will have a chance to try finished sauerkrauts to have a better idea of different flavours, tastes and textures are possible.
